Micah Wexler honors Maestro Martino at The Residency: Dead Chefs

Join Micah Wexler at Umamicatessen in DTLA tonight and every Thursday through August for The Residency – Dead Chefs. This rotating dinner series is Chef Wexler’s homage to past chefs who have advanced and influenced cuisine by “doing something different”. Featuring a broad range of chefs, time periods, countries, and cuisine, tonights dinner pays homage to Maestro Martino, a celebrity chef of his day. Bridging the gap between medieval times and the food of the renaissance, Martino influenced what would be Italian cuisine of today. Through this special one time event, Chef Wexler illustrates a snapshot of culinary evolution through both traditon and inspiration. And here’s our snapshots from our preview!

This 5 course prix fixe menu showcases a variety of rustic dishes from Martino’s time with Chef Wexler’s personal twist. The menu includes the Sgombri con Zucchini e Finocchi – Mackerel, summer squash, wild fennel sauce, Zanzarelli con Fava e Zafferano – Bread soup, fava bean, and saffron, Tagliarini Genovese – fresh pasta, arugula, mozzarella, and parmigiano, Maialino de Latte Arrosto – Roasted suckling pig, garlic, herbs, and offal sauce, and the Crostata di Mandorle – Almond tart, date, coffee.
