Two Pasadena chefs are teaming up to host “Sustainable Table Interactive Demo and Wine Tasting” at a|k|a Bistro in Pasadena on January 21 from 3 PM – 5 PM. Chef James Lambrinos of a|k|a Bistro will team up with Bistro 45′s Chef Steven Lona and Melissa’s World Variety Produce to show off their culinary skills, along with Santa Barbara wineries Refugio Ranch, Martian Ranch, Costa de Oro and Sanguis.
Chef Steven will demo roasted Brussels sprouts with duck confit, preserved kumquats and sunchoke chips, a salad of organic fennel and potatoes served with a brown butter anisette aioli, and fricasse of white asparagus and arugula served with spicy grapefruit vin and Shishito peppers. Chef James Lambrinos will concoct roasted butternut squash soup with mint yogurt, kabocha squash risotto with a cinnamon spiced crème, grilled purple and white asparagus with truffle vin, grilled fennel with charred tomato vin, and grilled Brussels sprouts with chipotle vin. The cooking demo and wine tasting are $18 per person.
If you can’t get enough of the cooking demo, a five-course “Sustainable Table Wine Dinner” will follow at 5:30 PM for $65 per person. The menu includes Yellowfin tuna tartare, wild Barramundi with tomato risotto, Pitman Farms duck, and an all natural Aussie lamb strip loin and butterscotch pot au creme.
