Horchata from Rebecca Subbiah

I was recently in Tampa, FL and went to the famous Taco Bus for dinner where I had my first horchata. I know I am way behind, but what a fun drink. Although served cold, with the addition of cinnamon it kind of makes it a fall drink too. Its easy to make and makes a refreshing change. That’s the beauty of trying new foods while traveling, you get to come home and add a new recipe to your repertoire.

1 cup long grain rice

5 cups water

1 teaspoon cinnamon

4 teaspoons of sugar or to taste, I personally don't like sweet drinks

1 cup of whole milk, condensed milk can also be used

1 teaspoon vanilla


1. place rice and water in a blender and blend for about a minute until it breaks up, let it soak overnight.

2. strain the rice water into a pitcher and discard the rice.

3. add the vanilla, cinnamon and sugar.

4. keep in fridge and serve over ice.
